The B.E.L.T Salad - Filling and Nutritious!

This is one of my favourite summer salads!

The foundation of a BELT is:

  • Bacon: Instead of using regular bacon, I use turkey bacon and make sure to get it nice and crisp and then crumble it on top like croutons.

  • Egg: Nothing like a fully cooked boiled egg to add protein and omega 3. I always use omega 3 eggs for the added brain benefit!

  • Lettuce: These salads normally are made with iceberg or romaine lettuce, however I prefer baby spinach. Spinach is full of folate, iron, magnesium and potassium.

  • Tomato: Nothing like fresh tomato to cut the heaviness of egg and cream dressing.

In addition to these ingredients, I like adding one additional green vegetable - usually cucumbers if it's an especially hot day to cool down the body or broccoli for additional vitamin C and fibre. Avocado is a wonderful topping for this salad as well!


The dressings that go best with this salad are ranch or creamy dill. The key to using dressing is to measure it out instead of free pouring into your salad. I start off with one TBS and then add more if needed. I hope you enjoy this refreshing and delicious salad!
