Banana bread is one of my favourite treats. Growing up, my mom made it all the time. It was moist, delicious and smelled so good. As I got older, I attempted making it myself many times. My desire to make the treat healthy, made it more of a bread that needed a topping and less of a dessert that I was excited to eat. This year, I decided that I am going to enjoy treats as treats, instead of making them super healthy. This recipe is adapted from the food network with a bit of my own spin. What makes it so moist and delicious is that it contains 4 whole bananas. I like it because the measurements are easy and it bakes it 60 minutes.
Best Banana Bread Recipe
2 cups sifted cake flour (if using white whole wheat use 1.5 cups, if using oat flour, use 2.5 cups)
1 tsp baking soda
1 tsp baking powder
1/2 cup coconut sugar or brown sugar
1 tsp cinnamon
1/2 tsp all spice
pinch of salt
1/2 cup pure maple syrup or honey
4 ripe bananas (approximately 2 cups of mashed bananas)
1 tsp pure vanilla extract
1/2 cup grape seed oil or coconut oil
Optional toppings - dark chocolate chunks and walnuts (1/2 cup each)
Mix together all dry ingredients. Mix together all wet ingredients. Pour wet into dry and fold with spatula until mixed. Line loaf tin with strips of parchment paper (grease to get paper to stick). Bake at 350 degrees for 60 minutes. I like to cut into 16 squares. The nutrition details are below if you include everything in the list as well as dark chocolate chunks and walnuts!
